A little bit of this: Recipe for Ghanaian dish- Red, Red

Red, Red

4 plantains, sliced

2 onions chopped

2 chiles diced

2 green peppers chopped

3 tomatos chopped

3 cups black eyed peas

3 ounces tomato paste

1 cup red palm or vegetable oil

Directions

In a large saucepan bring 5 cups of water to a boil. Add the black eyed peas and return to a boil. Let boil for 1 minute and reduce to a simmer for 45 minutes.

When peas are nearly done fry the sliced plaintains in a frying pan with 1 cup of oil. Brown each side and place fried plantains on paper towel to eliminate excess oil.

Add the peppers, tomatos, onion, chiles and tomato paste to the black eyed peas. Mix together and let simmer for 10 minutes.

Serve the plantains and bean mixture together in perfect harmony!

For dessert try a fresh chopped pineapple.
